crustless vegetable quiche

Quiche crusts aren't, in my opinion, too appetizing. This quiche has a lot packed into it, without needing the crust.








INGREDIENTS:
16 oz frozen spinach
16 oz frozen broccoli and cauliflower mix
red pepper
onion
mushrooms
handful of sundried tomatoes
handful of olives
4 eggs
8 oz feta cheese
salt and pepper
paprika
olive oil
DIRECTIONS:
Saute onion, red pepper, and mushrooms in olive oil. Then add spinach and broccoli and cauliflower, sauteing until tender. In a separate bowl, mix eggs, salt and pepper, tomatoes, cheese, and olives. In an oven-safe dish, mix egg mixture and vegetable mixture together. Sprinkle paprika on top. Bake for 45 minutes to an hour at 350.
